The
Hemingway Daiquiri and Papa Doble |
Here
is "the real story": In an interview with
NPR, Hilary Hemingway, Ernest Hemingway's niece, explains: "In
the early 1930s, Hemingway went into the Floridita to use the
restroom one day. People in the bar were bragging about the
daiquiris that were being served there. So he ordered one and
took a sip. Ernest asked for another one, this time with 'less
sugar and more rum.' And
that's how the Papa Doble, or the Hemingway Daiquiri, was born."
So there
you have it. The Floridita would soon become his favorite Bar
in Cuba.
Constantino
Ribalaigua Vert owned the Floridita. He tended the bar and was
credited at that time as the Best Bar Tender in Cuba. He is
also credited for dozens of new drinks that are still popular
today. And of course the drink that would go on to become the
Hemingway Daiquiri or Papa Doble. Constantino used the 4 ingredients
listed below and sugar. Mr. Hemingway tweaked Constantino's
original recipe to no sugar and double the rum.
The
Hemingway Daiquiri is also called the Papa Doble and is made
with:
- Light Rum - Lightly
aged Cuban if available. St. Croix exports a very good lightly
aged rum.
- Lime Juice (fully
ripe limes fresh squeezed)
- Grapefruit Juice
(fully ripe unsweetened white grapefruit fresh squeezed)
- Maraschino Liqueur
(not the juice of the bright red cherries in a jar)

Okay, okay. I know. Most
of the recipes below include sugar or simple sugar. Which technically
is not a Papa Doble or Hemingway Daiquiri. Adding sugar will make
the drink closer to the original daiquiri recipe by Constantino
Ribalaigua Vert which is also very good and refreshing. Please

There
is a Black Cherry flavored rum from St. Croix that I am going
to try in place of the Maraschino Liqueur. I will update on
this page and add my recipe if it turns out. It is clear so
will not affect the color of the drink. There is also a very
good lightly aged white rum from from St. Croix that is the
only white rum I use. Both are produced by Cruzan and are available
at most liquor stores.
Again, Hemingway
preferred his Daiquiri served frappe. In which the ingredients
are shaken in ice until well chilled, then strained into a glass
filled with finely crushed or shaved ice. Similar to making
a Snow Ball that you may be familiar with where a liquid flavoring
is added and eaten with a spoon. Use the blender for the shaved
ice or a snowball maker if you have one. If you must use a blender
don't mix it into a fully frozen daiquiri.
Study
the recipes listed below and start with Hemingway Daiquiri one
that sounds best to you. I would start with the Traditional
Hemingway Daiquiri.
Luxardo produces both Maraschino and Sangue Morlacco
Cherry Liqueur. Can be a little pricey but very little is usually
used for the Papa Doble. 6 drops, a teaspoon, not much. A
bottle will provide you with many Hemingway Daiquiris or Constantino
Daiquiris.
I plan
on buying the Sangue Morlacco Cherry Liqueur. I will update
this web page after I give it a try. I read it is slightly tart,
slightly sweet.

Please Note: Where
it calls for grapefruit, please use fresh squeezed unsweetened
white grapefruit juice.
I have
not tried this with Key Lime juice, but would like to. Always
use fresh squeezed lime juice.
Serve
these is a Coupe glass if available. A Coupe was originally
used for Champaign!
Please
skip the blender and serve these drinks frappe! The frappe method:
Shake well in
ice, then strain into a Coupe glass filled with finely crushed
or shaved ice.
Hemingway Daiquiri and Papa Doble Recipes |
TRADITIONAL
HEMINGWAY DAIQUIRI RECIPE:
- 3
oz White Cuban Rum
- 1
oz Fresh squeezed grapefruit juice
- 0.5
oz Fresh squeezed lime juice
- 1
tsp Maraschino liqueur

Maraschino Liqueur is a clear liqueur do not use the juice of bright
red cherries in a jar! |
- 2 1/2 jiggers
Bacardi white rum (1 jigger = 1 1/2 ounces) = 3.75 oz.
- Juice of 2
large limes
- Juice of 1/2
white grapefruit
- 6 drops of
maraschino liqueur
- 1 - 1 1/2
cups of ice
- lime zest
and sugar for frosting the glasses

Add all ingredients
to a blender, and blend till the ice resembles snow.
Grate the zest of two limes, and mix with a dash of sugar
in a shallow dish.
Swipe the rim of the glasses with a lime wedge, and dip
in the lime sugar to create frosting.
Pour the frozen drink in the two glasses, and serve with
more lime. |
Where it calls for grapefruit,
please use fresh squeezed white grapefruit juice! |
- 3 oz. white
rum
- 1/2 oz. Maraschino
liqueur
- 2 oz. grapefruit
juice
- 1 oz. lime
juice
- 1 oz. simple
syrup
- Garnish
- 2 dashes
Angostura bitters, or a peel from the grapefruit

In a shaker with ice, add the rum, Maraschino liqueur,
grapefruit and lime juice, and simple syrup.
Cap and shake
vigorously for 45 seconds.
Strain into
two cocktail glasses and garnish each with the bitters
or grapefruit peel. |
Hemingway would usually skip
the garnish. But it is really up to you. |
- 4 oz. light
rum
- 1½
oz. fresh lime juice
- 1 oz. fresh
grapefruit juice
- 1 tsp sugar
- 2 tsp Maraschino
liqueur
- Glass type:
Cocktail

Add
all of the ingredients to a cocktail shaker and fill with
ice.
Shake, then
strain into a chilled cocktail glass.

oz Papa’s Pilar Blonde Rum
- .5 oz fresh
Grapefruit, freshly squeezed
- .75 oz fresh
Lime juice, freshly squeezed
- 1 tsp Marashino
liqueur
- 1 tsp Sugar
Blend well
with ice Serve
in a large chilled Coupe glass.

Where it calls for a Cocktail

- 2 oz white
rum
- ¾
oz fresh grapefruit juice
- ½
oz fresh lime juice
- ¼
oz Luxardo Maraschino Liqueur
- ¼
oz simple syrup 1:1
- Grapefruit
Twist for Garnish
Hadley was
8 years his senior and reminded him of his nurse that
treated him (and he fell in love with) at the Italian
Front during the First World War. He volunteered to drive
an ambulance at the age of 18. A mortar shell had landed
in his trench.

Shake
all ingredients in a cocktail strainer with ice until
very cold
Strain into
a chilled cocktail glass. Garnish with a grapefruit twist.

- 2 oz White
Rum75
oz Lime Juice
- 1 tsp Maraschino
- 1 tsp Grapefruit
Juice
- 1 tsp Sugar
Shake with
ice and strain into a chilled cocktail glass. Serve frappe. |

Constantino Ribalaigua Vert
created his Floridita Daiquiri with just 5 ingredients.
|
- 1 1/2 ounces
light rum
- 1 T Luxardo
or other maraschino liqueur
- 3/4 ounce
lime juice
- 1 T limeade
concentrate or simple syrup
- 1/2 ounce
grapefruit juice
- Lime wheel
and a maraschino or Luxardo cherry to garnish (optional)

Add
all of the ingredients except the garnishes to an ice
filled cocktail shaker.
Shake or stir
and strain into a chilled cocktail glass.

or crushed ice
- 6 tablespoons
light rum (3 oz)
- 1/4 cup lime
juice (2 oz)
- 2 tablespoons
grapefruit juice (1 oz)
- 1 teaspoon
simple syrup
- 1 lime slice

In
a highball or tall glass over ice,
mix rum, lime
juice, grapefruit juice and simple syrup.
Garnish with
lime slice. |

Add all ingredients
to a cocktail shaker half filled with ice. Or is the cocktail
shaker half empty?
Shake until well
chilled Strain
into a chilled cocktail glass.

of these have the same ingredients but in differing quantities.
Have some fun! Keep mixing these until you find the perfect
